A Family Tradition of Qvevri Winemaking in Kartli
The Birth of Tevza Winery
Tevza Winery, founded by Goga Tevzadz, began as a small family operation in the backyard of his home in Saguramo, located in the Mtskheta region of Georgia. Goga is a trailblazer in the Georgian wine scene, championing a new trend known as micro-Cuvee. Each bottle of Tevza wine reflects Goga's expertise, dedication, and love for winemaking. He graduated from Georgian Agrarian University as a wine production technologist and honed his skills under the guidance of winemakers in California, including studies at the prestigious Department of Viticulture and Enology at Davis University. Upon returning to his roots, he initiated his winemaking journey right in his family's backyard.
Tevza's Winemaking Techniques
Located in the picturesque village of Saguramo, just north of Tbilisi, Tevza Winery produces wines exclusively from 100% Shavkapito grapes sourced from the Kartli region, specifically from the village of Ksovrisi. The vines, which are over 20 years old, are meticulously cared for by hand. In addition to Shavkapito, the winery also cultivates other grape varieties such as Goruli Mtsvane, Chinuri, Tavkveri, and Pinot Blanc. The grapes are handpicked at their peak ripeness and transported gently to the winery, where they are crushed directly into traditional Qvevris. Wild fermentation begins naturally, and after careful tasting and analysis, the wines are separated into individual Qvevris for further aging. Maceration and skin contact typically last between one to three months. In early spring, the wines are racked off their sediment and transferred back to Qvevris or other containers for clarification and style development. Bottling is performed with the utmost care to ensure quality.
