In the gorgeous land of Hammelburg, the Schloss Saaleck Winery was brought by Thomas and Ulrike in 2011. The vineyards at Schloss Saaleck Winery are cared for with passion and attention, in a biological approach certified by the NATURLAND Association.
The Schloss Saaleck Winery holds a rich and detailed history, which is believed to have started centuries ago, estate since 1298, by the command of Abbotts from the church. Surrounded by the strong viticultural traditions in Franconia, the journey of Schloss Saaleck was marked by increases in land and wine production, selling of the winery, a fire that destructed part of it, a rebuilding by the city of Hammelburg, and finally, the brought by the Lange Family from Bergtheim in 2011.
Today, the Schloss Saaleck winery works with a philosophy of ecological principles. The organic winery takes every step from the vineyard to the cellar with the highest care, allied to technical knowledge. The winery cellars aim to preserve the natural characteristics of the wine, highlighting the flavors and aromas brought with the terroir. “Wine should taste great, be agreeable and create a desire for more!”, that is the philosophy around Schloss Saaleck.
The limestone soils developed in steep slopes at Schloss Saaleck winery are a unique expression of the local terroir. In addition to the natural beauties of the Hammelburg landscape, ancient and historic vineyard walls from 1729 surround the vineyard making this winery the perfect spot for unforgettable wine experiences. Here grows the grape varieites Dornfelder, Domina, Pinot Meunier, Zweigelt, Silvaner, Pinot Gris and Riesling.”

A wine with strong character S. stands for Silvaner. Grown in a steep old vineyard above the town of Hammelburg. Cordon upbringing - lots of old wood. The trunks continue to grow horizontally. Here we only work by hand and the machines are attached to the cable pull. The selectively harvested grapes were first left in a vat for several hours - up to a day, which the experts call cold maceration. The smallest microbiological processes in the berries happen here, aromas are released from the berry skins and thus even more taste is formed. Insanity! Then gently pressed and spontaneously fermented with the wild yeasts from the vineyard and wine cellar in 500 liter tonneau oak barrels. The young wine is allowed to mature together with the yeast until it is bottled. Over time, the yeast settles at the bottom of the barrel. Later we bottle the wine without filtration. Goes well with strong and creamy dishes. An excellent wine. In addition to the perceptible wood aromas, the smell and taste are reminiscent of ripe yellow fruits such as apple and gooseberry. The pleasantly tart herbal note combines with the tannins and minerals of the shell limestone soil.
