The tasting includes 4 glasses , each vinified with a rigorous approach and measured intervention, to enhance the raw material, freshness and expressive precision , without oenological forcing.
The journey crosses different denominations, soils and altitudes , offering a comparative reading between alluvial, clayey and volcanic territories , and between winemaking styles in steel and more structured refinements.
The wines for tasting
Fiurì – IGT Terre Siciliane 2024
60% Catarratto, 40% Moscato d'Alessandria – Salaparuta (TP), 400 m above sea level
Vinification in forced reduction , with 24-hour cold pre-fermentation maceration , fermentation in steel and aging on the yeasts.
The result is a taut, citrusy and saline white, with notes of peach and a direct freshness that favors technical drinking and aromatic cleanliness.
Diatrema – Etna Bianco DOC 2023
Carricante and Catarratto lucida – Etna east slope, 700 m above sea level, volcanic soil
Manual harvest, cryomaceration, and controlled fermentation. Extended aging in stainless steel and further development in the bottle.
Marine and vertical profile, with clean citrus fruits, marked sapidity and a persistence that faithfully reflects the altitude and the lava matrix.
Nùra – Sicilia DOC 2024
Nero d'Avola – Salaparuta (TP), 200 m above sea level
Rosé obtained through vinification in a controlled atmosphere , fermentation in steel and short aging.
Intense pink color, floral and spicy nose, fresh, dry and linear mouth, designed to express the grape variety in an essential and gastronomic way.
Burkan – Etna Rosso DOC 2020
Nerello Mascalese – Etna north slope, 700 m above sea level, volcanic soil
Maceration for 18 days, fermentation in steel, aging for approximately one year in steel and 14 months in French oak , followed by maturation in the bottle.
Structured but measured red, with notes of morello cherry, floral and spicy, evident freshness and a savoury finish, consistent with the classic style of northern Etna.
Inside Favazza Etna Winery, you can freely visit an organic garden, Victorian greenhouses, a vineyard, the winemaking laboratory, an orchard, and the 1971 lava flow.
There is also a path that surrounds the estate, with descriptive stations.
