Notably, Gavalas is the only winery in Santorini that vinifies the rare indigenous grape varieties of Katsano and Voudomato. The region's mild winters and long, hot summers, combined with low rainfall, contribute to traditionally low yields. The high moisture levels in the soil allow it to retain water, nourishing the vines throughout the day.
