The most commonly planted grape varieties in Kakheti are Saperavi and Rkatsiteli. However, in recent years lot of wineries in Kakheti are dedicated themselves to give new life to forgotten grapes that have disappeared in the region during the rule of the Soviet Union in Georgia.
Together with Rkatsiteli and Saperavi, you will also find Kakhuri Mtsvane, Khikhvi, Kisi, Budeshuri, Mtsvivana, and a lot of different indigenous grape varieties on a smaller scale.
Wineries in Kakheti produce high-quality wines that are made from Kakhetian grape varieties using both European and traditional winemaking technology. Kakhetian winemaking technique is one of the ancient and the most unique winemaking methods in the world and it involves the use of Kvevri, an underground clay vessel used for fermentation and aging wines.
