Husband and Wife lead Bodegas Bhilar
Bodegas Bhilar is a boutique winery in Rioja Alavesa’s Elvillar which is operated by husband and wife, David Sampedro and Melanie Hickman. They aim to make terroir-driven wines using local, indigenous grape varieties with respect for the land and environment. Both of them want to make the best possible wine and share them with people all over the world. The family winery has been present since 1999 and follows biodynamic techniques of production.
Biodynamic Philosophy at the Winery
David started learning about biodynamic techniques in 1999 and changed his approach towards the vineyards. The first step was the conversion to organic farming to restore the much-needed balance between man and land. Horses were brought to the farm in 2014, and the use of tractors was totally stopped. Winemaker David Gil realized that the best wines are made in the vineyards itself. His philosophy features making unique wines through sustainable agriculture and minimal human intervention.
Natural Wines and Other Products
The vineyards are planted with Garnacha, Tempranillo, Viura, and Graciano grapes that are used to make red and white wines by the company. No additives are used during the winemaking process, and fermentations start spontaneously with native yeast. The winery and residence are “”off the electric grid”” utilising solar panels for the production of energy for the entire estate. Wine enthusiasts can visit the estate for a nice time and enjoy some of their best wines with the best views of the amazing landscape all around the winery.
