Der größtenteils unter den Tonsteinschichten verborgene Wald weist völlig andere Umweltbedingungen auf als heute, mit einem viel wärmeren Klima als heute. Lago Trasimeno - Baden, Surfen und Angeln

Im grünen Herzen Umbriens, zwischen Schilf und weißen Seerosen, liegt der Lago Trasimeno, der viertgrößte See Italiens. Dieses Naturparadies ist reich an Tierarten wie Wildenten, Kormoranen und anderen Greifen und Eisvögeln. Die Kulisse bilden sanfte Hügel und dichte Wälder sowie weite Sonnenblumen- und Maisfelder sowie Weinberge und Olivenhaine.

Die größte Insel des Sees (es gibt drei Inseln) ist die Insel Polvese. Sie ist heute ein unbewohntes Gebiet und ein öffentlicher Park, in dem Sie das alte Kloster San Secondo, die Kirche San Giuliano und eine kürzlich restaurierte Burg aus dem 14. Jahrhundert besichtigen können. Planen Sie unbedingt einen Stopp zum Schwimmen oder für Wassersportaktivitäten ein.

Maltagliati con Asparagi e Tartufi Neri - Lecker

Maltagliati (italienisch für "schlecht geschnitten") sind kleine italienische Pastascheiben, die aus Teigstücken hergestellt werden, die von Ravioli oder Lasagne übrig geblieben sind. Maltagliati mit Spargel und schwarzem Trüffel wurde vom Autor, dem bekannten TV-Koch Sante de Santis (2016), als typisches Gericht der umbrischen Küche erklärt.

Neben Alba ist Umbrien auch für seine Trüffel bekannt. In Umbrien gibt es alle Arten von Trüffeln: weiße Trüffel sowie schwarze Sommer- und Wintertrüffel. Aber am wichtigsten ist der schwarze Norcia-Trüffel, der in Norcia und Spoleto wächst. Für dieses Gericht wird eine Spargelsauce aus Wein, Käse, Trüffelöl hergestellt und am Ende wird die Pasta mit frisch gehobelten Trüffeln verfeinert. Am besten kombiniert mit einem kräftigen Weißwein aus Orvieto.

Cicerchiata - Süße bunte Gebäckstücke

Cicerchiata ist ein sehr altes Rezept aus einfachen Zutaten wie Mehl, Öl und wenig Zucker. Der einzige Luxus dieses Rezepts ist der Honig und die bunten Zuckerperlen, die darüber gestreut werden. Es ist ein buntes Dessert, das typisch für den Karneval ist.

Dafür wird ein Teig aus Mehl, Eiern, Zitronenschale und ein paar Tropfen des Likörs Alchermes und Butter geknetet. Aus dem Teig werden kleine Bällchen geformt und in reichlich Öl frittiert. Geschälte Mandeln werden geschnitten und Honig wird erhitzt, bis er sich färbt. In einer Schüssel werden der Honig und die Bällchen gemischt und die Mandeln und gewürfelte kandierte Früchte sowie bunte Zuckerperlen hinzugefügt. Dann wird eine Kuchenform mit einem Loch in der Mitte eingefettet und die Masse wird hinzugefügt, damit sie abkühlt und die ringförmige Form der Kuchenform annimmt.

Tortino di Patate con Lenticchie e Tartufo Bianco - sehr umbrisch

Zu den Antipasti gehört immer der berühmte Tortino di patate con lenticchie e Tartufo Bianco, der in Umbrien sehr berühmt ist, eine Auflaufform mit einer Basis aus Linsen. Auf der Schicht aus Linsen werden sehr dünn geschnittene Kartoffelscheiben abwechselnd mit Pilzen und Kräutern geschichtet und dann mit weißem Trüffel bestreut. Dieses Gericht vereint dank seiner Zutaten drei gastronomische Gebiete Umbriens: das Gebiet von Castelluccio mit seinen ausgezeichneten Linsen, die Ebene von Colfiorito mit ihren Kartoffeln und das Tal von Valtopina mit seinen weißen Trüffeln.
