It is held at Cambados in Pontevedra, in the heart of one of Spain's most distinctive wine areas. It has been running since 1953, with a long unbroken local tradition behind it.

One of Spain's oldest food/wine festivals, it attracts ~150,000 visitors over 5 days. The programme includes courses, conferences, concerts, and seafood pairings. Harvest and grape festivals — fiestas de la vendimia, festas das vindimas, weinlesefeste — are some of the longest-running celebrations in their regions, with many running uninterrupted for a century or more. Programmes typically combine grape-stomping demonstrations, traditional music, parades of allegorical floats, food stalls offering regional specialities, and tastings of the area's wines. The events have strong local character and are often as much community celebrations as wine programmes, with town councils, parish committees and local producer associations sharing the organisational load. Many festivals incorporate religious elements — blessings of the harvest, processions to the parish church — that connect the wine calendar to the liturgical year. The event is organised by Cambados Town Council, which sets the tone and direction of the programme each year.

Galicia in Spain's northwestern corner produces some of the country's most distinctive wines on Atlantic-influenced terroirs. Rias Baixas is the flagship appellation, producing aromatic, saline whites from the indigenous Albariño grape on granite soils. Other appellations include Ribeiro, Ribeira Sacra (steep terraced slopes along the Sil and Mino rivers, producing Mencia-based reds and Godello whites), Valdeorras (Godello, Mencia) and Monterrei. Galician cuisine — octopus, scallops, percebes barnacles, empanadas — pairs naturally with the local wines.

Galician cuisine pairs the wines with pulpo a la gallega (boiled octopus with paprika), empanada gallega, percebes (gooseneck barnacles), Padron peppers, scallops and the Tarta de Santiago almond cake.
