A Delicious, Insightful Introduction to the Syracusan Wines Our visit started with a relaxed tasting of four different wines, each one accompanied by a delicious appetizer prepared by the wife of owner-winemaker Olaf. Olaf himself explained the characteristics of the wines in turn and how they were made. We then got to see his winery including the press and fermentation tanks, finishing up with a leisurely stroll around one of his vineyards. Olaf was a friendly, knowledgeable host happy to explain his approach to viticulture and winemaking in as much detail as we wanted. We thoroughly enjoyed our visit and tasting the Fausta Mansio wines.

Authentic winetasting Olaf being a native Sicilian occupied with traditional winemaking and olives despite his unusual Italian name was serving 5 wines at his property. Actually he got his name as his mother like the name of the old Viking king Olaf. It was a very nice experience and as we visited saracusa in October it was very quiet, nice temperature outside and we were the only guests. We also got to see his cellar with tanks, storage and labeling. A great experience!

A perfect night of wine tasting There was such a lovely calm and homely vibe at the tasting. Our hosts were incredibly knowledgeable with a clear love for the wine they create. The wine itself was beautiful and had flavourings that gave a tasty depiction of the local area. We wanted to take each bottle home but unfortunately did not have enough room in our suitcase! The food that was paired with each wine was perfectly matched and very tasty. We loved our experience here and would highly recommend it to anyone looking for an authentic wine tasting experience with fantastic hosts.

Authentic and personal The owner Seby met us at the vineyard, on the slopes of Etna. He gave us a little tour of the vineyard, explained his wines, and served them on a little deck, surrounded by vines and with views of the sea. Although his English is limited, we had no trouble understanding each other, and he has a great personality.

Real feel and care for nature The care and love of nature shone through - full organic and natural classification. They want their wine to reflect their winery. The land is so dry with sandy soil it seems amazing anything can grow but the bright green vines shine on the white soil. Lovely tour where were shown the vines up close, use of herbs to retain moisture, the old cellars dating back 200 years and 5 generations. Tasting takes place in a lovely room overlooking the vines. The guide was friendly and no pressure. Nice bread and olive oil, dried tomatoes and olives served. Really interesting…
