One of the region’s finest wines, and one that you cannot miss at wine tastings and tours in Trentino-Alto Adige, is Trentodoc. Trentodoc is Franciacorta’s cousin from the Alps and is a sparkling wine produced using the Metodo Classico (the same one used for Franciacorta and Champagne). This wine has a gold-yellowish colour and to the nose it brings a complex and varied bouquet. The most recognisable aromas are those of pastry, vanilla, peach, apricot and delicate flowers. On the palate, Trentodoc is dry and fresh at the same time, and it presents the same clear flowery and fruity notes that you get on the nose.
If you travel to wine tastings and tours in Alto Adige, you will be served a glass of Schiava, the signature red wine of the Bolzano area. Schiava, or Vernatsch in Tirolean, is an elegant, ruby red wine with mild acidity levels. The main aromas are those of berries, red currant and cherries on the nose.
