Notably, Champagne Blaise Lourdez does not use malolactic fermentation, preserving the natural acidity of the grapes and enhancing the wine's character and flavor. The evolution of their champagne production began during World War II under Rene Blais, leading to the launch of their first branded champagne in 1957, which has since gained a reputation for exceptional quality.
