It all began in the early 2000s. Avantis Estate’s winemaker, Mr. Apostolos Mountrichas, discovered a profound connection with Santorini and the strong personality of Assyrtiko, a native grape variety renowned for its unique characteristics. Driven by this passion, he embarked on his Santorini project in 2012.
In 2021, after nearly a decade of dedication and innovation, Mr. Mountrichas founded Anhydrous Winery. His winemaking philosophy is deeply rooted in experimenting with ancient techniques to produce modern wines that exhibit purity and primary varietal characteristics.
Anhydrous wines are a testament to the unique terroir of Santorini, reflecting the island’s anhydrous (dry) land, the majesty of its earth, the volcanic soil, the intense sun, the cooling sea breeze, and the Cycladic air. These elements combine to create wines with a distinctive and intense personality, capturing the essence of this unique PDO (Protected Designation of Origin) region.

Write a reviewAMAZING - we did a wine and food tasting called “The Volcano”. It came with 4 dishes and 4 wines. This winery has some delicious wines, and the amazing staff was so attentive. Maria our server was so knowledgeable and Martino took us into the wine cellar to tell us more about this beautiful winery. Very reasonably priced experience, loved it so much.

The experience was terrific! The Terra wine tasting and pairing were phenomenal. Each dish and wine complimented one another. I would say go here for lunch, as you would partake in a four-course meal. Trust me, the food was fantastic and filling.

Decided to do the food pairing and wine tasting on a whim for lunch while in Fira, and it was the best decision! Such a gem of a place and our waiter was very knowledgeable on the food and wine. Everything was absolutely delicious! Would go back in a heartbeat!

We decided to enjoy a wine tasting at short notice and got our money's worth. The wine is very good and is presented in a very sophisticated manner. The ambience is also uniquely beautiful. All in all, highly recommended!!! If you haven't been here, you haven't experienced one of the most beautiful things on Santorini...
