The Wine Compass is a wine cellar located in the heart of Dijon, in the vaulted cellar of a listed 19th-century building.
We organize wine tastings from Burgundy and all over Europe, for locals and tourists curious to discover the region.
All our tastings are accompanied by generous platters of charcuterie and cheeses (please let us know of any allergies and/or specific dietary requirements).
Your host: Matthieu Aravantinos
- Native of Dijon
- 10 years of experience in the industry
- Sommelier and wine merchant in Seville in 2014
- Graduated from the CFPPA of Beaune in 2015
- Graduated from the Wine & Spirit Education Trust Level 3 in 2016, Mâcon wine-growing high school
- Sommelier in Gevrey-Chambertin at L'Hôtel des Deux Chèvres from 2015 to 2018
- Sommelier & Manager of a London wine bar chain, The Grape Variety, from 2019 to 2021
- Importer of wines from around the world in London from 2021 to 2022
- WSET Diploma in 2023
- Official Ambassador of the Climats of the Burgundy Vineyards
Your host: Pauline Dumont
- Born in the Jura, I grew up not far from the vineyards of the Côte de Beaune
- Having graduated with a Master's degree in Applied Foreign Languages for Commerce and Business in Dijon in 2015, I put my language skills to use in my passion for wines and spirits during internships at Cassissium in Nuits-Saint-Georges and at NobleWine in Munich, Germany.
- 7 years of experience in the industry
- Head of Direct Sales and Wine Tourism at Domaine Chanson in Beaune from November 2017 to May 2024
- Graduated from the Wine & Spirit Education Trust Level 3 in 2024, École Vivant in Pommard
- Official Ambassador of the Climats of the Burgundy Vineyards

Écrire un avisUn vrai coup de cœur pour le Wine Compass !!! Accueil chaleureux, très bons conseils, et une sélection de vins vraiment top pour notre tour d'Italie. On se sent à l’aise tout de suite, que l’on s’y connaisse en vin ou pas. L’ambiance est conviviale, on prend le temps de discuter, de découvrir, de savourer. Clairement une adresse où on a envie de revenir. Je recommande à 1000%. Un grand merci à Mathieu pour cette super soirée !!

This was our second visit to Matthieu's cozy wine cellar. Our group of four was welcomed by Pauline, who introduced us to the secrets of Burgundy wines in both French and German. Her explanations were very informative and engaging; we completely lost track of time. It was exciting for us to taste wines from small and previously unknown producers. We highly recommend "The Wine Compass" and look forward to our next visit.

We took the Burgundy master class with Matthieu and absolutely loved it. He’s incredibly knowledgeable, and he made the learning and tasting both fun and accessible. His passion for Burgundy really shines through, and the wines he selected were excellent. He also did a great job translating seamlessly between French and English, making everyone feel included. He also provided local recommendations for dining, as well as information on our self-drive tour the following day. Highly recommend.
