Giano dell'Umbria is a charming medieval village in the "green heart" of Italy. It overlooks a beautiful silver landscape of olive trees. It is a place of perfect ecological balance where people have always lived in harmony with nature.
The extraction of olive oil is an ancient ritual rich in symbolism, which is repeated every year in a magic of history, culture, tradition and folklore. The Del Sero family lives in Moriano, a couple of kilometers from Giano, and for generations has cultivated olive trees and produced extra virgin olive oil.
Del Sero oil is extracted using the traditional method of first cold pressing, with granite millstones and hydraulic presses, in a recently built plant that integrates well with the surrounding landscape.
The mill has production and bottling units and large rooms for guests. A protected path allows monitoring all stages of the production process and a large room can easily accommodate large groups of people in a welcoming atmosphere.
Guests can also enjoy over 2,000 square meters of green areas dotted with centuries-old olive trees, the "piazza della macina" and a large parking lot.
The Frantoio is easily accessible and well connected to the main national highways. It can be reached quickly from the center of the main cities (Rome 1.5 hours - Florence 2 hours - Ancona 1.5 hours - Perugia 40 hours). And it is easily reachable from the main regional tourist destinations (Spoleto, Assisi, Todi, Montefalco, Bevagna, Spello...).
Guests will be able to live an exciting experience, discovering the world of olive oil, learning about its history and culture and appreciating its beneficial effects on health and taste.

DISCOVER THE WORLD OF OLIVE OIL

Our proposal includes a guided tour of the oil mill with speaker (English/French):
- How olive oil is made: detailed description of all the stages of the production process, from the fruit to the oil, using the traditional method of the first cold pressing (granite millstones and hydraulic presses). Comparison with other extraction methods;
How a top quality olive oil is made: description of the methods used in the various stages of the production and conservation process, which directly influence the quality of the olive oil; Questions and answers.

Premium Tasting:
Mix of bruschetta prepared on the spot with wood-fired bread:
- Classic (olive oil and salt);
- Garlic (olive oil, salt, garlic);
- Various sauces.
Platter of cold cuts and cheeses (salami, capocollo, ham, local pecorino).
Drinks:
- Red wine, water.

The proposal can be adapted to specific needs on request. We will be happy to accompany our guests to the beautiful nearby places that are worth a visit (e.g. Morcicchia Castle, San Felice Abbey, centuries-old olive tree of Macciano).

A 360 degree experience! The Del Sero family took us on a journey into the past with a visit to the oil mill and then re-emerged into the present with a sublime tasting! Tradition never disappoints!

Pleasant experience. Excellent oil. Fascinating to see the REAL production process in stone and not with the latest generation machines. When you enter this oil mill you immediately feel at home and this is not to be taken for granted!! The quality of the sublime oil. The one from once upon a time. Excellent tasting of local products and bruschetta. Accompanied by excellent local wine and obviously freshly pressed oil. Thanks from Ilaria and Mauretto!

I did the premium tour yesterday with my girlfriend and friends and had a great time. The tour maintains the old way of making olive oil. It’s a smaller family run business so this is a more authentic and rustic experience. I learned a lot about the process, science, health benefits, and taste of oils. The oil itself is incredible! Overall an enjoyable experience if you want to see how a family has kept the operation going through generations. Best time to visit is October as the olives are actively being picked and processed this month.
