Botrytized grapes are harvested in stages, as the mold appears, and placed in buttons (Hung. – puttonyos, baskets), where under the pressure of their weight, a concentrated juice, even juice extract, is formed from the raisin berries. This aromatic juice is mixed with a basic dry wine. The more buttons are placed in the bottles of Aszu wine, the higher its concentration, sweetness, quality, and price. The minimum number of buttons is 3, the maximum is 6. Aszu is aged in oak barrels, in basements, up to 10 years, but not less than 4 years. Its average alcohol content is 9-12.5%.
