Tokay wines consist mainly of 6 grape varieties: Furmint, Hárslevelű, Sárgamuskotály (Yellow Muscat), Kabar, Kövérszőlő and Zeta.
Furmint occupies about 70% of Tokay vineyards. It is used to make sweet and dry wines. Young wines from Furmint are a tone of fresh apples, aged in barrels-tones of honey and nuts.
Hárslevelű (hun. Harslevelu-linden leaf) – the second most important variety of Tokay, which occupies 30 % of plantings. Harschlevelu is made into light, dry wines with floral aromas and mineral notes. A blend of Furmint and Harshlevelu is the basis of Tokay’s sweet wines.
Sárgamuskotály, aka Yellow Muscat, is a tint component of Tokay blends. It makes an excellent monosort dessert wine as well.
