Winemaking with a Commitment to Nature
The vineyards of Cantine Paolo Leo thrive in the heart of Parco del Negroamaro, where respect for nature and biodiversity is paramount. The winery cultivates a diverse array of grape varieties, including Primitivo, Negroamaro, Salice Salentino, and both Primitivo and Negroamaro Rosé. Additionally, high-quality Fiano, Chardonnay, and Malvasia are grown alongside fruity Pinot Grigio, Susumaniello, Verdeca, and Minutolo.

The winery's modern cellar spans 1500 square meters and features an advanced winemaking system, including a barrel room with 500 French oak barrels, each with a capacity of 225 liters. The grapes are meticulously hand-selected to ensure only the finest bunches are pressed using a state-of-the-art soft pressing system, guaranteeing the highest quality wines.
