Surrounded by unspoiled nature and charming vineyards, Cantine Paololeo is located in the heart of Salento in the Apulia region of southern Italy. Preserving the traditional methods, today, Paolo Leo, the owner of the winery, has introduced many modern techniques of wine production. The winery is a short drive away from San Donaci and Brindisi, two gorgeous areas of the Puglia Region. In 1989, Paolo Leo established the Cantine Paololeo Winery, carrying out the legacy of winemaking family. The wine production tasks, such as harvesting, vinification, bottling, marketing and many more are divided among 15 employees. Even young winemaker, Nicola Leo, works along with Paolo, showing great passion and commitment towards the family business. At present, the delectable wines of the Leo Family of Cantine Paololeo are not only famous in Italy but also throughout the globe.

Winemaking in the Respect for Nature

The vineyards of Paolo Leo are residing in the heart of Parco del Negroamaro. With complete respect of Mother Nature and biodiversity, Paolo cultivates a vast range of grapes, including Primitivo, Negroamaro, Salice Salentino, Primitivo Rosè, and Negroamaro Rosè. He also grows top-quality Fiano, Chardonnay, and Malvasia, along with fruity Pinot Grey, Susumaniello, Verdeca, and Minutolo.

Manual Selection at the Winery for the Best Possible Grapes

The new cellar of the company covers a total area of 1500 square meters. It consists of advanced winemaking refining system and a barrel room, comprised of 500 French oak barrels of capacity around 225 liters. After manually selecting the best bunches, the grapes are pressed in the cellar using the modern soft pressing system.
