Cartizze PDC: Pioneering Sustainable Organic Winemaking in Veneto
A Natural Gem in Valdobbiadene
Cartizze is a unique hilly area covering just 108 hectares, renowned for producing the prestigious Prosecco DOCG Superiore di Cartizze. PDC stands out as the sole winery dedicated to crafting this exceptional sparkling wine, located in the heart of Valdobbiadene's Cartizze territory. The winery exclusively uses 100% Glera grapes, with an annual production limited to 15,000 bottles. PDC offers four distinct sparkling wine variations: Cartizze Brut (5g/l), Cartizze Dry (20g/l), Cartizze Extra Brut BIO (2g/l), and Cartizze Extra Dry BIO (13g/l). The first fermentation occurs in concrete tanks, followed by a second fermentation in an autoclave using the Martinotti/Charmat method, lasting between 2 to 5 months. Every detail is meticulously planned to ensure the highest quality in each bottle.
Organic Certification in Cartizze
PDC proudly holds the title of the only organic certified winery in Cartizze. The vineyard cultivation and winemaking processes adhere strictly to sustainable practices. In the vineyard, only natural products are permitted under organic regulations. In the cellar, organic vinification utilizes authorized oenological products and methods. Compliance with organic legislation is ensured through rigorous inspections and certifications conducted throughout the year.
Annual controls are performed both in the vineyard and on the final product, guaranteeing the integrity of the wine.
Commitment to Sustainable Organic Farming
Organic farming represents a sustainable approach that fosters a healthy environment, restores natural ecosystems, and promotes biodiversity. PDC's Extra Brut BIO and Extra Dry BIO wines are crafted exclusively from selected grapes sourced from centenarian vines. These grapes are harvested separately and undergo gentle pressing, resulting in a more balanced and refined wine structure.
