A Family Winery with 15 Generations of Tradition
The Origin Story of Château de Lascaux
The Cavalier family has been rooted in Vacquières since the 16th century, practicing a diverse form of agriculture that includes cereals, olives, and vineyards, alongside sheep farming and weaving. Historical records indicate that viticulture was already present, primarily aimed at producing wine for family consumption. A significant turning point for the estate occurred in 1984 when Jean-Benoît took over the family business as the 14th generation of winemakers. He modernized the grape varieties, explored new terroirs, increased planting density, and constructed a new winery. Today, the 15th generation joins the 14th in continuing the family legacy, all while respecting the rich natural environment surrounding the estate.
Ideal Climate for Vine Growth
The Mediterranean climate here is influenced by continental air from the Cévennes mountains. This region enjoys higher rainfall than other parts of Languedoc-Roussillon, ensuring ample water reserves for our vineyards. During the ripening phase, significant temperature variations occur, with cooler nights and warmer days, allowing for optimal grape maturation. The soils are deep and well-draining, providing consistent hydration to the vines and contributing to the unique character of the wine. The vineyards are bordered by wild garrigue and Mediterranean forests, featuring limestone soils and a variety of flora, including kermes oaks, Salzmann pines, and heather.
