Welcome to Laurent Šatov Winery, a family-owned establishment founded in 2012. Our passion for winemaking began as a hobby, but over the years, our production has grown significantly, both in volume and quality. We specialize in controlled fermentation, which allows us to create wines with a pure taste and distinct varietal character. Our commitment to excellence has earned us numerous gold medals at prestigious wine exhibitions, and we strive to continue this tradition of quality.

Crafting Quality Wines

At Laurent Šatov, our winemaking process is tailored to the specific needs of each vintage and grape variety. We utilize techniques such as spontaneous fermentation and extended yeast contact, alongside controlled temperature fermentation for optimal results. We prioritize minimizing sulfur use through early filtration and careful clarification of musts and wines, ensuring a cleaner and more authentic flavor profile.

Our Wines from Znojmo Region

All our wines are sourced from the Znojmo wine region, with grapes hand-picked from vineyards located about 15 km from Šatov. While our wines are classified as regional, their sugar content reflects their quality. Our white wines undergo controlled fermentation in stainless steel tanks, while our red wines experience malolactic fermentation and are aged for a minimum of one year in a combination of stainless steel, glass demijohns, and wooden barrels. After bottling, our wines are carefully stored in our cellar archive for further maturation.
