The most exciting and interesting part of the wine making process happens in the cellar part of the winery. After the staff at Matthais Dostert has carefully selected the best grapes for winemaking, they are carted off to the cellars. In large vats, the fermentation takes place for the white wines whereas the sparkling wines are produced in traditional bottle fermentation. After the fermentation of the wines, aging and storing of the white wines is done in large barrels which will later on be distributed in bottles for selling.
