In the entire wine making process at Principi di Mola great care and attention is paid to each step of the journey from the care of the vines and soil, the harvesting of the grapes and the transformation of the grapes into excellent wine. The territory of the Principi di Mola winery is extremely hilly and falls in the Patri valley, which leaves it well-ventilated and exposed to long hours of sunlight. This climate and terroir mean that the grapes produced are only of the highest quality. The vineyards in the valley are planted on a hilly terrain in rows, which are 2.5 meters apart, allowing the sunlight to filter onto the vines. The entire vineyard is cultivated using the espalier method and Guyot pruning. Most of the processes in the vineyards including the topping, greening, pruning and hoeing operations are carried out using the most advanced technologies that allow for high quality products with limited efforts.
Winemaking in respect of nature
Fertilization makes use of only organic fertilizers along with the green manure technique for more fertile soil. The harvesting of the grapes is done manually by hand with the use of scissors to select only the best grapes. The most popular wines produced at Principi di Mola are the Mamertino Bianco DOP, the Mamertino Rosso DOP, and the IGP Terre Siciliane White.
