Where is Terre di Cosenza Wine Region

Terre di Cosenza wine region is in southern Italy. It covers the Cozenza province entirely.

History of Terre di Cosenza

Terre di Cosenza is a new DOC in Calabria. The region of Cozenza has a long history with winemaking but it was only introduced by the title in late 2011, so it can serve as a renaissance for winemaking in the area.

Terrior of Terre di Cosenza

Terre di Cosenza is characterized by both a warm climate in the summer, and cold winter. The region grows grapes that give wines with balance and elegance. The soil in Terre di Cosenza wine region is responsible for the specific kind of minerality they provide to the wine, where it has a limestone-rich landscape and loamy ground.

Terre di Cosenza Characteristics

Terre di Cosenza Rosso's grapes come exclusively from Calabria, a southern Italy region with dark-skinned Magliocco vines. These need to constitute at least 60% of the wine's grape blend. Magliocco may be part of the blend for rosé wines, which allows for more flexibility; Terra di Cosenza Rosato can be made from any combination of Greco Nero, Gaglioppo, Aglianico and Nero d’Avola. The DOC's finest whites are based on Greco Bianco and Mantonico. The quality of red wines is related to their full body and drier taste. The white wines are based on pelargonium vinifera varieties and usually have a light, delicate flavor. Overall, Terra di Cosenza DOC wines are a great compromise for Salsiccia di Calabria DOP and Cappocollo di Calabria DOP.

Food to pair with Terre di Cosenza

1. Trofie al pesto

This traditional dish, Trofie al pesto from Liguria, is one of Italy's most popular dishes. The dish is a combination of two elements, like trofie, a type of hand-rolled pasta made with flour and water and pesto - one of the most famous sauces in the world. It also contains pine nuts and salt. You can choose to have it topped with parmesan cheese.

To have authentic pesto Genovese, it should contain basilico Genovese, extra-virgin Ligurian olive oil, high-quality garlic, Parmigiano Reggiano DOP and Pecorino cheese that come from Rome, Tuscany Sardinia or Sicily. Trofie with pesto is traditionally served in small servings as a first course, where the trofie perfectly picks up the pesto's fine consistency for a symphony of flavors with every bite. Trofile al pesto goes well with Terre di Cosenza wines.

2. Pizza vegetariana

As the name implies, Italian pizza can be made with vegetables and is typically quite popular among vegetarians. Vegetarian pizza is a type of pizza with tomato sauce and mozzarella cheese from which the meat has been removed. This is topped with vegetables like zucchini, eggplants, and peppers, which are usually cooked before being placed on the pizza. Other typical topping types include peppers, artichoke hearts, spinach, carrots, onions, mushrooms, capers and celery. Olive and oregano may also be included in some recipes. The pizza's usually topped off with a drizzle of olive oil and some fresh basil leaves on top. If you're looking to reduce the amount of cheese, try replacing it with toppings like onions or Pinna Nera (black anchovies). It pairs well with Terre di Cosenza wines.

3. Cotoletta alla Milanese

Like its distant Viennese cousin, cotoletta alla Milanese is a thinly pounded breaded, pan-fried veal cutlet. Although the two dishes are similar, they have slight differences: the Viennese version is usually breaded before frying in oil or butter, while the Milanese version is fried without breading and entails a boneless cut.

The similarities between these two dishes are not a coincidence. As Milan was once under the rule of the Austro-Hungarian Empire, it's possible that Austria contributed to this dish through their Italian aftermath. One way that the cotoletta has been defined is as a type of dish resembling Wiener schnitzel. However, when put up against superficial comparisons like this, Milanese locals, Milanese and Lombards alike, believe that their specialty goes back all the way to the 12th century.

An Italian take on the cotoletta is the l'orecchia di elefante, meaning elephant ear, which is larger and flatter in shape. The cotoletta originates from la costoletta - a cut of meat traditionally used to make it. It pairs friendly with Terre di Cosenza wines.
