The Akhmeta Wine House
Founded in 2014, Akhmeta Wine House is a proud member of the Natural Wine Association Georgia. This winery was created to protect the vineyard ecosystem, allowing nature to thrive through biodiversity and organic farming practices. Over 70% of the wines produced here come from Kakheti, Georgia's premier winemaking region. With around 80 grape varieties in Kakheti, the winery focuses on native grapes such as Rkatsiteli, Mtsvane, and Saperavi to craft their unique wines.
The Majestic Vineyards of the Winery
The Akhmeta vineyards benefit from a unique microclimate, located at the confluence of three rivers. This area enjoys a constant breeze, while the soil, rich in carbonate and volcanogenic rocks, lies at an altitude of 500 to 550 meters above sea level, creating ideal conditions for grape ripening. In 2016, the winery expanded its vineyards by planting Saperavi, Khikhvi, Kisi, and Kakhuri Mtsvivani varieties. By 2019, production capacity increased from 3,000 to 15,000 bottles per year, and the vineyards received organic certification.
Kvevri Orange Wine at Akhmeta
In Kakheti, the winemaking process is distinct, utilizing the entire grape mass, known as “chacha,” during fermentation. Grapes are crushed and placed in Kvevris, which are then buried underground. Over several days, the grape skins settle at the bottom. After about two weeks, the Kvevris are sealed with stone or wood lids and left to ferment for up to two years. Natural yeast from the grape skins initiates fermentation, resulting in unfiltered wines rich in phenolic compounds and tannins. This traditional Kvevri method gives the wines high antioxidant properties and a unique flavor profile.
