In 2014, Pierre Maillet transitioned from a cooperative cellar to establish Domaine de la Jobeline. Since then, he has focused on extensive renovations and replanting efforts to enhance wine quality. The vineyard features grape varieties such as Chardonnay, Aligoté, and Gamay, which are carefully harvested to preserve their freshness. Grapes are pressed within minutes of picking to prevent oxidation and heat damage. Both young and old vines are hand-harvested to ensure only the best grapes are selected. The clay-limestone soil in this region is ideal for vine cultivation, and Pierre works diligently in the vineyard to maintain its natural ecosystem, employing a blend of traditional and modern winemaking techniques.
