At the age of 23, Thierry Germain took over the Domaine des Roches Neuves in Varrains and started to run his own winery. The domain is located on the outskirts of Saumur in the Loire Valley. The vineyards of Domaine des Roches Neuves are cultivated following a natural process to keep the soil healthy and full of biodiversity. Domaine des Roches Neuves follows a fully biodynamic farming process where the harvest is manual and the winemakers choose their grape varieties with rich aroma, taste, and texture. All grapes at Domaine des Roches Neuves are manually harvested. Domaine des Roches Neuves produces excellent and great tasting white and red wines using organic and environmentally friendly processes.

Domaine des Roches Neuves has a lot of benefits from their classic Saumur tuffeau-based sandy and clay-limestone soils as well as cool fermentation temperatures, 16-24 degrees Centigrade, for preserving the aroma and freshness of all their wines. Domaine des Roches Neuves offers four excellent white wines from its Chenin Blanc vineyards in Saumur. They produce white wines specifically at the sites of Les Cerpes et Saint-Vincent, Dampierre and Parnay. These vineyards are located atop soils typically of a sandy clay layer overlying limestone bedrock. Domaine des Roches Neuves ages most of its white wines on the lees for nearly nine months.
