An Incredible Story at Domaine Des Terres De Velle
The story of Domaine Des Terres De Velle started in the year 2009 with six hectares divided into 25 small parcels in the prestigious villages of the southern Côte de Beaune. Within the parcels are Premier Crus in Puligny-Montrachet, Meursault, and, Volnay and the vineyard production is roughly 30,000 bottles a year. Sophie and Fabrice created a small winery at Domaine Des Terres De Velle from the ground up. This accomplishment is extremely difficult and rare in a world where inheritance and history dominate the narratives of most other winery estates in the region.
Biodynamic Winemaking at Domaine Des Terres De Velle
Sophie and Fabrice farm their vines using organic and biodynamic traditions and principles. In 2011, they finished the construction of their brand new winery where they now ferment all wines with original yeasts and use gravity flow to move the wines to the cellar for maturation. During maturation, the wines are left alone in barrels for months, before blending back together in steel tanks to allow for a natural settling of the wines, allowing Fabrice to bottle without filtration.

The wines of Domaine Des Terres De Velle combine lush creaminess of Meursault with the citrus notes of Puligny. In the glass, light golden straw yellow with green hues on the rim dominate. The aromatics are deep and satisfying, with notes of yellow apple, pear, fresh cream, white flowers, citrus, wet stones, oyster and a subtle kiss of oak. It is nicely textured, medium-bodied and well-balanced, with acidity that’s bright, not shrill. The finish is fragrant with crisp minerality. If possible, decant the wine about a half hour before serving it in large Burgundy glasses. Bring the wine up in temperature to allow more of its aromas and textures to blossom. Pair the wine with a piece of fish, maybe snapper or halibut, and some roasted fingerling potatoes…but this wine goes with just about anything.
