Founded in 2015, Marani Sevsamora serves as both an educational and research facility dedicated to advancing organic viticulture and winemaking in Georgia. The winery focuses on producing bio wines, earning its official bio certification in 2019. Here, modern winemaking technologies blend seamlessly with age-old traditions, creating a unique wine experience.
Bio-Organic Winemaking Practices
At Marani Sevsamora, the vineyards are cultivated using organic methods, emphasizing the use of natural bio-preparations and nutrient-rich fertilizers. The winemaking process incorporates traditional Georgian techniques, utilizing a 300 m² cellar equipped with both qvevri—traditional clay pots for fermentation and aging—and state-of-the-art technology from Bucher Vaslin. In 2019, the winery began producing both classical and qvevri bio wines, with plans to increase production to 45,000 bottles in 2020, 25% of which will be crafted using bio-organic methods.
Vineyards at Marani Sevsamora
Spanning 7 hectares, the vineyards are designed for minimal human intervention, allowing nature to thrive. By implementing bio-winegrowing techniques, Marani Sevsamora received its Bio wine-producing certificate from CAUCASCERT in July 2019. The winery adheres strictly to organic farming practices, ensuring that only organic bio preparations and fertilizers are used in the cultivation of grapes.
