The Family History of Paolo Cottini Winery
Paolo Cottini is a winery located in San Micheletto, a small hill dividing Fumane from Bure, and it provides a stunning view of the Fumane Valley. The winery is a fantastic place, far from the city traffic and close to the main communication routes. Paolo and Sara gave their winery the name to provide a personal identity to the wines they produce. Even though the winery is entirely new, it is the third generation of the family in winemaking. Paolo’s father, Silvano, passed his knowledge to his son, and today, Paolo combines tradition and history with new and modern techniques to make high-quality wines.
The Growing Conditions of the Grapes
The vineyards are all located near Valpolicella, one is in Negrar Valley, 600 meters above the sea level, and the other is at Valgatara, 200 meters above sea level. The soil and high altitudes help in the growth of excellent and ripe grapes. The main grapes that grow here are Rondinella, Corvina, and Corvinone.

They are all used to make famous Valpolicella red wines. Amarone is their most prestigious and complex red wine with an alcohol content of almost 15%. Valpolicella and Valpolicella Ripasso are two other wine styles crafted at Paolo Cottini Winery. The wines clearly show the unique characteristics of the region and have complex aromas and concentration.
Recently, the wines of Paolo Cottini Winery have received international fame and are available in many countries; they are present in almost all European countries, as well as China, Korea, and Australia.
