Honoring Time-Honored Practices

Founded in 2004, Saó del Coster is dedicated to traditional vineyard cultivation. We prioritize minimal intervention, respect natural cycles, and adhere to the lunar calendar while using only organic treatments. This deep connection with nature and commitment to ancient farming methods result in powerful yet refined wines that showcase the unique terroir of Priorat, offering enjoyment to both producers and consumers alike.

Stunning Views of Priorat

Our winery is nestled in the picturesque village of Gratallops, housed in a charming mid-18th century building that boasts breathtaking views of the Priorat mountains. Although we are not officially certified, we produce approximately 25,000 bottles of organic wine each year. We promote biodiversity by allowing grass to grow, plow with mules, and work the soil by hand. Our wines reflect our dedication to sustainable practices, as we avoid chemical products and motorized vehicles. Each wine ages naturally, free from commercial pressures, attracting wine enthusiasts from near and far.

The Unique Priorat Wine Region

The Priorat region is renowned for its exceptional terroir, characterized by its Mediterranean landscape, terraced hillsides, and ancient bush vines nestled among quaint villages. The nearby Montsant mountain range not only enhances the scenery but also provides essential wind protection and diverse altitudes for our vineyards. The steep slopes of Priorat necessitate the creation of "costers," or terraces, which complicate mechanization and require extensive manual labor for pruning and harvesting.

Patrick Pochon is adorable! This charming Swiss guy invited us to discover his wines through a little tasting with cheese... I learned a lot, had a great time and left with a few bottles bought directly from the owner! Magnificent terrace with a view of the entire region! Thank you Patrick!

A hidden gem in Gratallops — so glad we stopped in.

We stumbled upon this spot while exploring the village and are so glad we made an appointment. Patrick was fantastic — he shared fascinating insights into the region’s winemaking history and delivered an unforgettable experience. Don’t miss it!

Excellent tasting experience with perfect light pairings! Patrick is a very gracious and interesting host along with being a talented wine maker. The experience of visiting small makers like this is very unique and you really get to see the passion it takes to make great wine at a scale where the craft is still very personal. My wife and I are young in the world of wine but among a handful of wine regions we've visited, Priorat is our favorite region so far and this maker may well be our favorite as well. We would definitely recommend visiting.

Visit with Patrick with very nice views from his terrace, they explained everything very well to us and we did a wine tasting accompanied by cheeses and sausages very appropriate for tasting each wine. Patrick advises you very well on the wine to drink according to the food and with which foods it is best to combine. The winery is small but very pretty, built within stone arches and with Licorella-slate walls. I recommend their wines and especially the sweet wine.
