Upon returning to the Adelaide Hills, he established Simon Tolley Estate, where he continues the legacy of his ancestors by crafting distinctive wines. The winery offers a diverse selection of high-quality red, white, and rosé wines, all sourced from the finest vineyards in South Australia.
Environmentally Conscious Vineyard Practices
With a deep respect for the environment, Simon cultivates grapes on 27 hectares of family-owned land in the Adelaide Hills. The vineyard features a variety of grape types, including Syrah, Chardonnay, Sauvignon Blanc, and Pinot Noir. The region's rolling hills, steep slopes, and fertile valleys create an ideal microclimate for producing grapes rich in flavor and aroma.
