Traditional Qvevri Winemaking
At Wine House Gurjaani, the art of winemaking is rooted in tradition, utilizing the ancient qvevri method. These large, conical clay vessels are buried underground, where the wine undergoes natural fermentation and maturation. The process begins with whole grape bunches being gently crushed in a wooden trough known as a satsnakheli, followed by foot treading to avoid damaging the seeds. The resulting must is then transferred directly into the qvevri. Once fermentation is complete, the cap of the qvevri sinks, and the vessel is sealed with limestone clay, allowing the wine to rest until spring. After a year, the wine is transferred to another qvevri for further aging.
Wine House Gurjaani produces a variety of white grapes, including Rkatsiteli, Mstvane Kakhuri, and Kisi, as well as red varietals like Saperavi and Tavkveri. Each grape contributes to the distinct character of the wines, reflecting the unique terroir of Kakheti.
