Carus Vini is nestled in the picturesque San Casciano in Val di Pesa, a prime location within the Chianti Classico region. Owned by Guidi Carissimo, the estate spans approximately 26 hectares, featuring both vineyards and olive groves. Since the 2017 vintage, Carus Vini has proudly held organic certification. The estate includes 5 hectares dedicated to Chianti Classico DOCG, 5 hectares for Toscana IGT, and 4.5 hectares of olive trees. Some vineyards have been recently replanted and began producing grapes in the 2019 harvest.

Quality-Driven Winemaking Practices

The vineyards thrive in clay-rich, well-drained soil on hilly terrain, benefiting from optimal sunlight exposure and a continental climate. These conditions contribute to the complexity of the grapes, essential for crafting high-quality wines. The harvest begins with Merlot and Shiraz, concluding with Sangiovese and Cabernet Sauvignon. Carus Vini maintains a low yield approach, ensuring that only the finest grapes are selected for their red and white wines, all produced using organic and sustainable methods.

Traditional Cellar Techniques

The winery features a range of temperature-controlled stainless steel tanks, traditional steel vats, and French oak barrels for aging. Here, estate-grown grapes are vinified, with a portion of the wine also supplied to local producers. Carus Vini is committed to minimizing environmental impact while upholding quality and tradition. The family-run winery is characterized by excellent red wines in different consistencies. During the tasting, an excellent platter of genuine Tuscan cold cuts and cheeses is offered. An absolutely worthwhile experience, recommended to both Tuscans and visitors from other regions. A true gem for lovers of good wine and Tuscan tradition.

Small cellar but with some very interesting gems. Guido, the owner, was incredibly kind and hospitable. I will definitely come back to visit him, I highly recommend this winery to discover particularities that the Chianti land can offer.

I participated with friends in the astronomical evening organized at the winery, an exceptional location, you can dine with a splendid view of the vineyards at sunset, enjoying excellent wine. The staff is extremely welcoming and full of attention to the service and to each of the customers. Simple but still tasty dinner menu, I recommend to everyone.

Beautiful experience, in a fantastic location, surrounded by really well-kept vineyards. Guido, the owner, friendly and very passionate, welcomed us with kindness and friendliness. The staff and the sommelier were very good and guided us through the tasting. Excellent wines, from Sangiovese, Cabernet, Merlot to the Gran Selezione. Highly recommended!
