Carus Vini is nestled in the picturesque San Casciano in Val di Pesa, a prime location within the Chianti Classico region. Owned by Guidi Carissimo, the estate spans approximately 26 hectares, featuring both vineyards and olive groves. Since the 2017 vintage, Carus Vini has proudly held organic certification. The estate includes 5 hectares dedicated to Chianti Classico DOCG, 5 hectares for Toscana IGT, and 4.5 hectares of olive trees. Some vineyards have been recently replanted and began producing grapes in the 2019 harvest.
Quality-Driven Winemaking Practices
The vineyards thrive in clay-rich, well-drained soil on hilly terrain, benefiting from optimal sunlight exposure and a continental climate. These conditions contribute to the complexity of the grapes, essential for crafting high-quality wines. The harvest begins with Merlot and Shiraz, concluding with Sangiovese and Cabernet Sauvignon. Carus Vini maintains a low yield approach, ensuring that only the finest grapes are selected for their red and white wines, all produced using organic and sustainable methods.
Traditional Cellar Techniques
The winery features a range of temperature-controlled stainless steel tanks, traditional steel vats, and French oak barrels for aging. Here, estate-grown grapes are vinified, with a portion of the wine also supplied to local producers. Carus Vini is committed to minimizing environmental impact while upholding quality and tradition. The winery adheres to the principles of Organic Agriculture, emphasizing respect for both the environment and the vineyard.
