Gifted Terroir of Chianti Classico
Carus Vini is located in one of the most beautiful areas of Chianti Classico, San Casciano in Val di Pesa and has some of the best conditions for making wines. Guidi Carissimo owns the property, which includes around 26 hectares of vines and olive groves. The winery has been certified organic since the 2017 vintage. 5 hectares are of the Chianti Classico DOCG, 5 hectares of Toscana IGT, and 4.5 hectares of olive groves. Some of the vineyards have been replanted and came into production in the 2019 harvest.
Low Yield High Quality Approach of Carus Vini
The vineyards feature clayey skeleton-rich soil and are located in hilly areas. The sunlight exposure, continental climate, and temperature variations here provide the perfect complexity to grapes required for high-quality wine production. The harvest season starts with the Merlot and Shiraz grapes and ends with Sangiovese and Cabernet Sauvignon. The density of yield is low, but high quality as some vines take several years to mature properly. Only organic and sustainable methods are used, and the best grapes are used for making their high-quality red and white wines.

The cellar has various sizes of temperature-controlled stainless steel tanks and authentic steel vats and French oak barrels for ageing the wines. Exclusive estate-grown grapes are vinified here, and some of the wine is sold to local producers too. They produce wine with minimum possible environmental impact without losing the target of quality and respecting the tradition. The company follows the guidelines dictated by Organic Agriculture following strong principles that respect the environment and their vineyard.
