Kairos winery: keep it simple as possible
Kairos Vina is a small, family-owned winery whose underlining philosophy is to keep it as simple as possible. It is an organic and dry-farming operation based in the South and Central Dalmatia region. It is named after two Greek words, Chronos, that means passing time and Kairos that shows the time for action. The family worked with close friends to make wines and established the winery. The vineyards are above the town of Trogir, between the mountains and the sea, with stunning natural views of the Adriatic Coast.
Great wines from Dalmatia
The natural conditions in the area are perfect for the cultivation of vineyards. The Mediterranean sun, rocky soil, fast winds, and the hard work of the workers allow them to grow high-quality, fruity grapes. Their wines are made with natural yeasts and a minuscule amount of sulphur. Very labour-intensive, they couldn’t make it without skilled local workers. Zinfandel, Plavac mali, Merlot, Cabernet Sauvignon, Syrah, and Tempranillo are the grapes used to make their red and rose wines. Zinfandel is the indigenous variety of Dalmatia known as Crljenak.

Keeping the respect for nature
Before the planting of vineyards, the area had Mediterranean shrubs and edible, medicinal plants. The biodiversity here is immense, and all the work is done, keeping in mind the health of the environment and the vineyards. The natural, organic wines have a decent fruity taste and reflect the qualities of the amazing terroir of the land.
