Il viaggio della cantina Pileum nel settore del vino

Pileum è una bellissima azienda vinicola situata nel cuore delle colline del Piglio con gli incantevoli paesaggi del Frosinone. La zona ha una storia di produzione di vini Cesanese del Piglio DOCG. Fondata nel 2002, un gruppo di amici e familiari legati alla terra hanno lavorato insieme per formare l'azienda vinicola Pileum, nata come una piccola azienda che produceva buoni vini rossi. Inizialmente le prime partite di vino venivano prodotte solo per pochi gruppi di amici e famiglie. Successivamente, con la crescente domanda della gente, iniziarono a venderlo al mercato. Grazie all'utilizzo di tecnologie moderne ed avanzate, in pochi anni di attività l'azienda ha iniziato a produrre vini eleganti di qualità superiore.

I vigneti di Pileum

L'azienda vinicola Pileum produce i suoi vini nel massimo rispetto dell'antica tradizione enologica del Cesanese insieme ad un team di esperti agronomi ed enologi. La culla del Cesanese fornisce gli elementi per dare vita a vini eccellenti con caratteristiche e varietà varietali distinte per i vini Pileum, suo territorio di origine. I vigneti sono composti da piccoli appezzamenti situati nella zona del Piglio più esposta e storicamente più vocata alla viticoltura. I quindici ettari di uva Cesanese di Affile e Passerina del Frusinate producono vini audaci come il Cesanese del Piglio DOCG Classico, Superiore e Superiore Riserva.

La magia nella cantina del Pileum

Le uve vengono selezionate e raccolte manualmente seguendo il tempo di maturazione. Dopo un'accurata raccolta, le uve vengono avviate al processo di vinificazione per ottenere la grande profondità ed eleganza del vino. I vini vengono poi conservati a temperatura controllata in vasche di acciaio per preservare i valori aromatici dei frutti. Infine, il vino matura in tradizionali grandi botti di rovere francese.

What can I say ... Very young staff who immediately make you feel at home. The structure is really well cared for, our table was by a window overlooking the vineyard. The food is really high quality. If you are passing through the area, this is an essential stop to enjoy and taste the flavors of the area. Well done

Beautiful experience of flavors, hospitality, excellent wine! Young and talented chefs... we can't wait to go back. P.S.: the photo of the dessert is missing, the tartlet was too beautiful and good... I didn't have time!

Top Restaurant, in a wonderfull vineyard , excellent food, top and very nice Chef, gorgious red wine produced in the vineyard. What Else? Go there and test it !!

Sunday lunch, my wife and I. New place, well furnished, with large windows from which you can admire the wonderful panorama of the Piglio hills. Menu with few courses, but which enhance the area and the season. Very friendly staff (they satisfied all our requests: vegetarian variations, coffee outside,...) and professional (all the waiters explained each course to us). Courses: two starters, zucchini flowers with ricotta and lemon cream, without anchovies, satisfy my vegetarian wife (score 8) Marinated beef carpaccio on tomato jelly cream and burrata (score 10) two first courses: Fussilloni with two kinds of potatoes, flambéed provola and two kinds of aromatic oil (score 8) Fine tuna (cut into thin flakes, like truffle To clarify, very fragrant, garnish of gardener and oil flavored with parsley (score 9 ½) A second course: Braised chicken breast, puree of vegetable pate, flavored oil (score 8) A dessert: Dark mousse on a bed of apricot jam (score 8 ). A water and a white wine. Passerina. Bill 85 €. Excellent value for money Suggestions/constructive criticism: I would add the tablecloth or mini placemats, the tables are for two a bit small. HIGHLY RECOMMENDED
