Domaine Céline & Frédéric Gueguen
This Chablis comes from a 7-hectare vineyard in Préhy, southwest of the Chablis region, planted on Kimmeridgian limestone and clay soils with southeastern exposure. The vines average 40 years old, managed under sustainable viticulture with HVE level 3 certification. After gentle pressing and cold settling, fermentation with indigenous yeasts occurs at controlled temperatures, followed by malolactic fermentation on fine lees. The wine is aged exclusively in stainless steel vats to preserve its fresh, fruity character. Bright light yellow in color, it offers a refined, fruity nose of white-fleshed and citrus fruits. The palate is supple, fresh, balanced, and mineral-driven — a classic example of great Chablis. Ideal served chilled (10–12°C), it pairs beautifully with oysters, seafood salad, Burgundy snails, and fresh goat cheese, with a cellaring potential of 5 to 10 years.
