AOP Vacqueyras
his Vacqueyras red wine comes from 35-year-old vines planted in sandy-clay soils on the Garrigues plateau near Sarrians. The blend is 60% Grenache and 40% Syrah, hand-harvested with meticulous sorting both in the vineyard and cellar. Vinification combines Grenache and Syrah grapes when maturity aligns, with a gentle three-week maceration using techniques like pumping over and délestage. Malolactic fermentation occurs in wooden or stainless steel vats and barrels. Aging takes place in wooden vats, half-muids, and barrels, giving the wine complexity and structure. Best served slightly chilled at 16–18°C, with decanting recommended to enhance flavors.
