The vinification is carried out in compliance with REG UE 203/2012 which regulates organic winemaking. The grapes are harvested by hand and pressed whole with soft pressing. Fermentation takes place at a temperature of 16-18°C in steel tanks. The wine is left for a certain period in a tank to age on the lees until it is bottled.
