Cálem Wine Cellar  

This fine white and dry Port wine from Portugal offers a smooth, dry, and balanced profile. The wine is crafted from traditional grape varieties including Códega, Malvasia Fina, Donzelinho, and Esgana Cão, grown in schistous-sandstone soils with some granite, at altitudes up to 600 meters. The winemaking process involves slight maceration and gentle pressing, followed by slow fermentation at controlled low temperatures (16–18°C) to preserve freshness and aromatic complexity. The fermentation is stopped by fortification with grape brandy, producing this distinctive fortified wine. The blend is aged for a minimum of three years in large oak barrels and stainless steel vats, yielding a pale straw-colored wine with a delicate and aromatic nose marked by fresh fruit and floral notes. On the palate, it is slightly dry yet smooth and well balanced, finishing fresh, engaging, and enduring.
