Vinification
Gentle extraction by direct pneumatic pressing. Fermentation at low temperature, stopped during the fermentation to preserve 10g of residual sugars. Short aging on fine lees and early bottling to preserve the freshness of the wine.
Tasting
This Viognier comes from a small production. The wine has a pale gold and clear color. The body is rich with fresh and fruity notes, dominated by aromas of peach and apricot, accompanied by lemony nuances. The palate has a very pleasant attack. The fermentation stopped in progress gives us a sensation of sweetness. The fruit aromas are powerful and correspond to the nose, aromas of honeysuckle and violet bring a beautiful complexity. The sweetness is associated with a hint of acidity creating a beautiful balance.
Pairing and service
Serve at 8 and 10° with foie gras or smoked salmon. It will also be perfect on its own as an aperitif with friends.
