Sangiovese is an Italian red wine grape varietal. It is Italy’s most popular grape, well known as the primary varietal used for example in Brunello di Montalcino. Above all, though it is an amazing grape as it takes on the characteristics of the region it comes from. Hence why we love working with our Sangiovese. It is made near the Tuscan Coast in an area where in summer days are hot and dry giving way to a fresh breeze coming into the plains from the sea at night. This helps to foster sugar development during day time while cool nights preserve acidity, aromas, and freshness. In temperature controlled small and medium stainless steel vats at between 26º-28º C for 15-18 days on skins.
Cement vats for 6 months, bottle aging for 3 months.
This beautiful Red wine from the Coast has a rich ruby color with a nose of black cherry and spices. The medium-bodied palate, with ripe red and black fruits balanced by fine acidity and full, ripe tannins. Because of its great acidity this wine pairs amazingly well with tomato sauces, pizza and pasta such as lasagne, spaghetti aglio e olio, spag bolognese but it’s also a great wine with a simple grill, roast or even a burger. Count Manfredo, loves it in summer out of a fridge paired even with seafood, as the Venetians do it! His preferred seafood pairing is with Spaghetti Vongole here the acidity of the wine perfectly matches the saltiness of the dish. Enjoy!
