Domaine Sylvie Fahrer & Fils  

Crafted in the heart of Alsace, this Saint-Hippolyte Pinot Noir mirrors the traditional Rouge de Saint-Hippolyte but gains an extra layer of refinement through aging in used Burgundy barrels for around eight months. This gentle barrel influence rounds out the tannins and enhances the wine with subtle vanilla and toasted notes, adding maturity without overwhelming the fruit. With silky tannins, vibrant acidity, and a structure built for aging, it is a versatile red that pairs beautifully with grilled meats, game, or rich sauces. While it can rest in the cellar to evolve further, it is also ready to be enjoyed now, provided it is well-aerated.
